College of Agriculture, University of Basra studied the nutritional and therapeutic efficiency of galacto-oligosaccharide sugar produced by the enzyme beta-galactosidase extracted from local isolates of lactic acid bacteria by the postgraduate student, Ms. Maryam Jawad Abdul Latif.
The thesis aimed at producing sugar from a safe and inexpensive food source (whey) using the partially purified enzyme beta-galactosidase extracted from local isolates of lactic acid bacteria and studying the nutritional and therapeutic efficiency of sugar.
The thesis concluded that the best dosed concentration of sugar produced by experimental animals led to a reduction in cholesterol levels (LDL) and an increase in cholesterol levels (HDL).
